What’s for Lunch? Tridoshic Egg Salad + A Little Egg-planation

I was gifted two dozen fresh farm eggs this week from one of my yoga students (the best kind of surprise, right?)…

And immediately I thought—okay…what are we doing with all these eggs?

Egg salad felt like the obvious answer. Simple, nourishing, and easy to have on hand.

But instead of making it the “typical” way, I wanted to prepare it in a way that feels supportive for most bodies…so I made it tridoshic.

A Little Egg-planation

In Ayurveda, eggs are considered building and nourishing.

They can be incredibly supportive when your body needs:

  • strength
  • recovery
  • grounding

But…they can also be:

  • heavy (Kapha)
  • heating (Pitta) a little dense to digest (Vata) if not prepared well

So it’s usually not the egg itself that’s the issue… …it’s how we prepare it.

That’s where Ayurveda comes in. We adjust the qualities so your body can actually receive the nourishment.

Amy’s Tridoshic Egg Salad

Ingredients

  • 6 hard-boiled eggs
  • 2–3 tbsp mayo (adjust to your preference)
  • 1 tsp Dijon mustard
  • 1–2 tsp fresh lemon juice
  • Pinch of mineral salt
  • Fresh cracked black pepper

Spices (this is where the magic happens)

  • 1/2 tsp turmeric
  • 1/2 tsp dried dill or fresh dill
  • 1/4 tsp cumin
  • 1/4 tsp coriander

Optional add-ins (based on your body)

  • Finely chopped celery (helps lighten for Kapha)
  • Fresh parsley or cilantro (cooling for Pitta)
  • A drizzle of olive oil if it feels too dry (supportive for Vata)

Why This Works

  • Lemon + mustard → support digestion
  • Turmeric → helps with inflammation + keeps things moving
  • Cumin + coriander → gently support agni without overheating
  • Dill → reduces heaviness

So instead of egg salad feeling like it just sits in your system… this version feels a little more alive and supportive.

How I’m Eating It

Right now, I’m keeping it simple:

on toasted bread over a bed of greens or honestly…straight from the bowl standing in my kitchen 😄

No rules—just awareness.
